Ingredients for 2 servings:
- 150 g cheese, strong hard cheese (Gloucester cheese or Cheddar or Cantal)
- 2 tbsp beer
- 1 tsp mustard, hot
- 2 eggs
- 1 egg yolk
- 2 slices of toast
- 4 anchovy fillets
- Paprika powder, sweet and hot
- salt and pepper
- 2 tbsp butter
- 1 tbsp chives, in rolls

Deliciously spiced up version of the Welsh Rarebit
Preheat the oven to 200°C (convection not recommended). Finely chop the anchovy fillets. Grate the cheese and gently melt it in a heatproof bowl with the butter in a bain-marie. Stir in the beer, mustard, chopped anchovies, and egg yolk one after the other, and season the mixture with paprika, salt, and pepper. Mix everything thoroughly. Lightly toast the slices of bread, spread them with the cheese mixture, place them on a baking sheet, and bake in the oven for about 8 minutes. Meanwhile, fry two fried eggs. Remove the slices of bread from the oven, place a fried egg on each slice, season the eggs with salt, paprika, and pepper, and serve garnished with a few chives. If you don’t like anchovies or want a change, you can mix about 50g of very finely chopped ham into the cheese mixture instead of the anchovy fillets.
