Ingredients for 4 servings:
- 2 can/n ready-made product, (baked beans) vegan
- 250g tofu
- 100 g soy cream (soy cream cuisine), e.g. E.g. Soya Cuisine Light
- 4 tomatoes
- 1 can of mushrooms, 1st choice
- 8 slices of toast
- 50 g margarine, organic
- 250 g French fries, frozen
- 100 g smoked tofu
- 200 g tofu – mini wieners
- 1 pinch of guar gum
- Sauce, e.g. HP Brown Sauce
- ketchup
- turmeric
- chives
- salt and pepper
- possibly water
- oil
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Spread the fries on parchment paper in the preheated oven and heat for 15 to 20 minutes, depending on the type. For the vegan scrambled eggs, finely grate the tofu, mix it with the soy cream, a generous pinch of turmeric (for color and flavor), and a pinch of guar gum (for better binding). Add it to a pan with heated oil and fry for 3 to 5 minutes. Season with salt, pepper, and chives. Quarter the tomatoes and mushrooms and fry them in a pan with heated oil on all sides for a total of 5 minutes. I usually use less oil and add one or two tablespoons of water, salt, and pepper after two minutes. Heat the baked beans slowly in a pan (10 minutes), stirring occasionally. Do not let them boil. Cut the smoked tofu into thin slices and fry them in a pan with hot oil along with the tofu wieners for 5 minutes. Spread the slices of toast with margarine on both sides and fry in a separate pan without oil for 2 minutes per side. Finally, arrange the baked beans, vegan scrambled eggs, sautéed mushrooms and tomatoes, and the French fries on a spacious plate. Place the fried smoked tofu slices on top of the scrambled eggs. Add the tofu mini wieners, ketchup, HP Brown Sauce, and the fried toast (cut into triangles) to the edge of the plate and serve everything together. Serve with orange juice and black tea/English Breakfast Tea with soy drink. Note: In Great Britain, and especially in multicultural London, it is sometimes easier for vegetarians and vegans to get hold of delicious cooking ingredients – most supermarkets label their products accordingly and often have separate display areas for different diets and food cultures. The Full English Breakfast is ideal for a vegan breakfast simply because a good portion of its ingredients (excluding sausages, black pudding, and eggs, of course) are plant-based. However, due to the many ingredients, preparing it presents a certain logistical challenge and requires juggling pots and pans.
