Irish carrot and red seaweed bread

Ingredients for 1 servings:

  • 250 g flour, white, sifted
  • 100 g butter, melted
  • 4 medium-sized eggs, fresh and at room temperature
  • 50 g powdered sugar, sifted
  • 1 large carrot(s), scraped and finely grated
  • 25 g seaweed (red algae), dried
  • ½ tsp baking powder, sifted

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Irish carrot and dillisk bread

Soak the red seaweed in water for 5 minutes, dry with a paper towel, and finely chop. Mix all ingredients in a bowl (adding the flour and baking powder last). Pour into a buttered baking pan and bake at 140°C for about 50 minutes. Check the bread is done with a wooden skewer. If no dough sticks to the skewer, the bread is ready.
