Ingredients for 1 servings:
- 300 ml milk
- 300 ml buttermilk
- 225 g flour, white, sifted
- 225 g flour (wholemeal flour)
- 50 g Cheddar cheese, grated
- 25 g butter
- 1 tsp salt
- 1 tsp baking soda
- 2 medium-sized onions, peeled and finely chopped
- 2 tsp parsley, fresh, washed and finely chopped

Irish country cheese bread
Combine all ingredients except the cheese in a large bowl and mix. Knead lightly and form into a log. Place on a floured baking sheet and score a star-shaped pattern with a knife. Brush with milk, sprinkle with cheese, and bake in a preheated oven at 200°C for about 35-40 minutes. Check the bread is done with a wooden skewer. If no dough sticks to the skewer, the bread is ready.
