Mediterranean-style bean salad

Ingredients for 4 servings:

  • 750 g beans, green
  • Salt
  • 2 garlic cloves, more if desired
  • 3 tomatoes
  • 100 g cheese, Pecorino (spicy hard cheese made from sheep’s milk)
  • 4 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp mustard
  • 2 tsp honey
  • pepper
  • Thyme, shredded

Bean salad with tomatoes, shaved pecorino and spicy dressing

First, clean the beans and then cut them into approximately 5 cm pieces. Cook them in plenty of salted water until al dente. Meanwhile, peel and finely chop the garlic cloves and dice the tomatoes. Drain the beans and rinse them in cold water until they are just lukewarm. Mix them with the garlic and tomatoes in a bowl. Grate the pecorino over the beans and stir in the oil, balsamic vinegar, mustard, honey, pepper, and thyme. Mix everything well and season to taste. You could also use any other strong hard cheese instead of the pecorino. This salad makes a great side dish for a barbecue!
