Ciabatta à la Bruschetta, topped with mozzarella

Ingredients for 3 servings:

  • 1 ciabatta (approx. 500 g)
  • 3 m.-large tomato(s)
  • 2 m.-sized onion(s)
  • 250g mozzarella
  • 2 cloves garlic
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

As a main meal or as a snack – made in minutes

Cut the tomatoes and onions into fairly small cubes. Press the garlic cloves through a press or chop them into very fine pieces. Mix everything together in a bowl with olive oil and a little salt and pepper. If you have time, let the mixture sit for a few hours. If you’re hungry, skip this step. Drain off any excess liquid. Cut the ciabatta into top and bottom halves and dry/toast them in a preheated oven (225-250 degrees Celsius) for about 3 minutes. Meanwhile, thinly slice the mozzarella. Spread a layer of the tomato and onion mixture on each half of the ciabatta and top with the mozzarella slices. After another 4-5 minutes in the oven, enjoy!
