Braised tomatoes alla Burrata

Ingredients for 4 servings:

  • 500 tomatoes, pitted, chopped
  • 250 g cheese (burrata)
  • 1 tbsp pine nuts
  • 2 tbsp olive oil
  • 20 basil leaves
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash, stem, and core the tomatoes, and cut into large pieces. You’ll need 500g of cored tomatoes. Roast the pine nuts in a grease-free pan until golden brown. Heat the olive oil in a pan, fry the tomatoes, season with salt and pepper, and place them in a baking dish. Meanwhile, preheat the grill. Cut the burrata into pieces and arrange them on top of the tomatoes. Place the baking dish in the grill until the burrata is golden brown. Wash the basil, pat dry, and roughly chop. Sprinkle the basil and pine nuts over the braised tomatoes and serve. Serve with warm ciabatta or baguette.
