Tuna mayonnaise, e.g. for Vitello Tonnato

Ingredients for 8 servings:

  • 1 can tuna, without oil
  • 3 anchovies
  • 2 egg yolks
  • 2 tbsp capers
  • 200 ml olive oil
  • 5 tbsp broth (instant)
  • ½ lemon(s) (juice)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the tonnato sauce, cut the well-drained tuna into pieces and puree it in a food processor along with the anchovies, capers (not the large ones), and egg yolk. Gradually add the olive oil until it emulsifies with the other ingredients to form a thick mayonnaise. Adjust the consistency with a little stock and season with lemon juice, pepper, and salt. It’s also delicious served with a piece of ciabatta bread.
