Onion jam

Ingredients for 8 servings:

  • 2 tbsp olive oil
  • 500 g onion(s), red, cut into rings
  • salt, pepper
  • 100 g sugar
  • 1 sprig(s) of thyme
  • 1 tbsp vinegar (red wine vinegar) or balsamic vinegar
  • 100 ml grenadine
  • 100 ml red wine, dry
  • 50 ml chicken stock

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat olive oil and sauté the onions. Add salt, pepper, sugar, thyme, and vinegar. Caramelize everything over high heat. Deglaze with red wine, grenadine, and stock and reduce until it resembles jam. Allow to cool and store in a cool place. Tastes wonderful with cheese such as Parmesan or goat cheese. The jam will keep in the refrigerator for about 8 to 10 days.
