Red wine balsamic shallots

Ingredients for 2 servings:

  • 8 small shallots, peeled
  • 3 tbsp sugar
  • 4 tbsp balsamic vinegar
  • 4 tbsp red wine, dry
  • 1 tbsp butter
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

ideal with pan-fried or grilled dishes

Peel the shallots, caramelize the sugar in a saucepan until light brown, add the shallots, and coat with the caramel. Pour in the balsamic vinegar and simmer until the caramel dissolves and the balsamic vinegar has thickened. Then add the red wine and simmer until it thickens again. If the onions aren’t yet soft, add more balsamic vinegar and red wine and reduce again. Season with salt and pepper and stir in the cold butter before serving. (The tablespoon measurements are approximate; I made it on the fly!). Goes perfectly with pan-fried or grilled meat, if you like that sweet flavor.
