Roasted peppers with tomatoes

Ingredients for 4 servings:

  • 4 large yellow bell peppers, quartered
  • 4 tomatoes (vine tomatoes), quartered
  • 3 clove(s) garlic, chopped
  • ½ bunch basil, cut into fine strips
  • olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the yellow bell peppers in a baking dish. Top each bell pepper quarter with tomatoes, garlic, and basil. Finally, season with salt and pepper and drizzle generously with olive oil. Bake in the oven at 225 degrees Celsius for about 20 minutes. Serve warm or cold (but never from the refrigerator).
