Pesto a la Genovese

Ingredients for 1 servings:

  • 2 bunch basil, fresh
  • 2 cloves garlic
  • 4 tbsp pine nuts
  • 4 tbsp Parmesan, grated
  • 5 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and dry the basil. Pick off the leaves and roughly chop them. Peel the garlic cloves and finely chop them with the pine nuts. Grind everything in a mortar and pestle until a smooth paste forms. Add the Parmesan cheese. Add the oil a spoonful at a time and stir until the sauce is creamy. Season with salt and pepper to taste. Pairs well with pasta and potato dishes.
