Mozzarella in Carrozza

Ingredients for 4 servings:

  • 200g mozzarella
  • 8 slices of toast, stale or white bread
  • Flour, for turning
  • 2 eggs
  • 1 tbsp milk
  • Salt
  • 4 tbsp olive oil, for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the mozzarella into slices the size of the bread slices. Top each slice with a slice of mozzarella and cover with a second slice. Briefly dip the edges of the bread in cold water and press down firmly. Coat the bread pieces in flour. Whisk the eggs with milk and salt. Coat the mozzarella slices in the flour. Heat oil in a pan. Fry the bread on both sides until nicely browned. Serve hot.
