Spinach with raisins

Ingredients for 4 servings:

  • 1 kg leaf spinach, fresh
  • 50 g raisins
  • 2 tbsp pine nuts
  • 2 cloves garlic
  • 3 tbsp oil (olive oil)
  • 2 tbsp butter
  • Salt
  • Pepper, from the mill

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Soak 50g of raisins in water. Wash the spinach leaves and place them in a saucepan while dripping wet. Heat until wilted. Drain the spinach leaves well. Heat 3-4 tablespoons of olive oil in a large pan and melt 2 tablespoons of butter. Halve 2 garlic cloves and fry over low heat, stirring occasionally. Remove from the pan. Add the spinach to the pan and toss in the hot fat. Drain the raisins and stir into the spinach. Cook gently for 10 minutes, stirring frequently. Season with salt and pepper. Finally, sprinkle with 2 tablespoons of pine nuts and, if desired, the fried garlic.
