Ingredients for 4 servings:

  • 200 g flour (durum wheat flour)
  • 250 g cheese (Crescenza; a fresh cheese)
  • 50 ml oil (olive oil, first pressing!)
  • ½ tsp salt
  • ½ cube of yeast

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Flatbread with cheese

Dissolve the yeast in lukewarm water and 1/3 of the oil. Put the flour in a bowl and make a well in the center. Pour in the dissolved yeast and cover with flour. Cover the bowl with a kitchen towel and let the dough rise for half an hour. Knead the dough with half of the remaining olive oil until it is nice and smooth. Let it rise for another half hour in a warm place away from drafts. Knead the dough briefly again and divide it in half. Preheat the oven to high. Roll out the dough thinly on a floured surface and divide it in half. Brush a baking sheet with oil and line it with one half of the dough. Dice the cheese and spread it on top. Cover with the second sheet of dough. Smooth it out and press the edges together. Brush with the remaining olive oil, season with salt, and prick with a fork to prevent the focaccia from bursting during baking. Place the focaccia in the oven and bake until golden brown (about 20 minutes). It’s best eaten while still warm.
