Ingredients for 2 servings:
- 125g spaghetti
- 1 m.-sized onion(s)
- 200 g mushrooms or a can
- 1 can artichoke(s) (bottoms)
- 200 ml cream
- 1 egg yolk per person
- 100 g Parmesan
- 100 g bacon (panchetta or bacon)
- olive oil
- Vinegar (wine vinegar)
- Salt
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Slice the onion and mushrooms into strips, and cut the artichoke bottoms into smaller pieces. Dice the bacon. Fry the bacon first, then the onion, in a little olive oil, then deglaze with a splash of white wine vinegar. Then add the mushrooms, then the artichoke bottoms. Season with salt and pepper and let everything simmer. Cook the spaghetti according to the instructions. In a bowl, mix the egg yolks with the cream and Parmesan cheese. Finally, add everything to the bowl with the cream mixture.
