- 4 eggs
- 180 g sugar
- 560 g almonds, ground without skin

Separate the eggs. Beat the egg yolks with the sugar using a hand mixer until the sugar is dissolved and the mixture turns light in color. Gradually add the almond flour and stir in slowly. If the mixer is no longer able to do this, continue kneading by hand. Beat the egg whites until stiff peaks form and add to the almond mixture. Knead until the egg whites are fully incorporated. Cover with plastic wrap and let rest in the refrigerator for 2 hours. Preheat the oven to 180°C. Line a baking tray with baking paper. Remove the mixture from the refrigerator, shape them into small balls, and place them on the tray. Bake for approximately 25 minutes.
