Italian biscuits, cantuccini

Mix all ingredients and finally fold in the nuts of your choice. This results in a fairly sticky dough. Carefully form two logs, place them on a baking sheet lined with baking paper, and bake at 180°C for about 35 minutes. Let cool slightly and then cut into thin slices. Return the slices to the baking sheet and bake again, this time at 150°C, for about 8 minutes. This hard pastry is best served with espresso or Vin Santo (Italian dessert wine).
