Olive Cantuccini

Ingredients for 1 servings:

  • 500 g flour
  • 100 g pine nuts
  • 175 g olives
  • 4 eggs
  • 3 tbsp olive oil
  • 2 tsp baking powder
  • 50 g Parmesan
  • ½ tsp pepper
  • ½ tsp salt
  • e.g. oregano, chopped
  • e.g. rosemary, ground

Working time approx. 30 minutes; Total time approx. 30 minutes

Spicy snacks

Preheat oven to 175°C (350°F). Toast the pine nuts in a dry pan. Combine the flour, eggs, olive oil, baking powder, freshly grated Parmesan cheese, pine nuts, and spices with a dough hook. Finely chop the olives and knead them into the dough. Form the mixture into a ball with your hands. Shape the dough into 3 long logs and place lengthwise on a baking sheet lined with baking paper. Bake for 20-25 minutes. Remove from the oven and, while still hot, cut into 1 cm thick slices with a sharp knife. Return the cantuccini to the baking sheet and bake at 200°C (400°F) for 5-10 minutes until crispy and golden brown. Once cooled, store in a tin.
