Ingredients for 2 servings:

  • 500 g chanterelles
  • 3 tbsp olive oil
  • 1 shallot(s)
  • 1 lime(s)
  • 0.1 liters of broth
  • 0.1 liter of cream
  • salt and pepper
  • 1 sprig(s) of thyme
  • chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the chanterelles and halve them lengthwise, depending on their size. Sauté the cleaned mushrooms in oil for 3-4 minutes. Add the very finely diced shallots and sauté briefly. Season with a little lime juice, salt, and pepper, and add the broth and cream. Simmer gently until the liquid is almost completely reduced. Stir in the finely chopped herbs. Serve with pasta.
