Panettone with pine nuts, chocolate and cranberries

Ingredients for 4 servings:

  • 200 ml milk, lukewarm
  • ½ cube of fresh yeast
  • 100 g sugar
  • 500 g flour
  • 2 vanilla pods, the pulp
  • 1 pinch of sea salt
  • 2 egg yolks
  • 100 g butter, soft
  • 1 tsp lemon zest
  • 60 g pine nuts
  • 80 g dark chocolate chips
  • 60 g cranberries
  • 1 tbsp butter for spreading

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 5 minutes

simply, from the Airfryer

Heat the milk and pour it into a mixing bowl. Crumble in the yeast and add 20g of the sugar. Mix well and let the yeast work for 10-15 minutes. Now put all the remaining dough ingredients in a bowl and knead well. Cover with a damp cloth and let rise in a warm place for about 1.5 hours or longer, until the dough has doubled in size. Knead the pine nuts, chocolate chips, and cranberries into the dough. Place the dough in a greased or paper baking dish and let rise again, covered, for 30-40 minutes in a warm place. Score the surface of the dough crosswise with a sharp knife or a carpet knife. This will relieve the dough’s tension. Pour half a cup of water into the air fryer. Place the baking dish in the cold air fryer and bake at 150°C (convection oven) for about 20 minutes. After 5-10 minutes of baking, brush the surface with a little butter and finish baking. Remove from the pan and let cool on a wire rack.
