Strawberry-Banana Tiramisu

Ingredients for 8 servings:

  • 200 g strawberries
  • 1 banana(s), ripe
  • 3 tbsp sugar
  • some lemon juice
  • 250 g mascarpone
  • 3 tbsp sugar
  • 2 eggs
  • 1 package of ladyfingers
  • some strawberries, for decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 20 minutes

Cut the strawberries and bananas into small pieces and place them in a bowl. Add the lemon juice and 3 tablespoons of sugar, mix well, and let stand for 10 minutes. For the cream, separate the eggs and beat the egg whites until stiff peaks form, gradually adding the sugar. Place the fruit in a sieve, reserving any liquid. In a bowl, mix the mascarpone and fruit. Carefully fold in the beaten egg whites. Briefly dip the sponge cakes in the reserved fruit juice and place them side by side in a dish. Spread with the cream. Repeat until all the cream is used up. Place the tiramisu in the refrigerator for several hours, ideally overnight. Decorate with strawberries before serving.
