Ingredients for 4 servings:

  • 2 cucumbers, peeled and thinly sliced
  • 4 tbsp lemon juice
  • 2 tbsp white wine vinegar
  • 2 small onions, red, thinly sliced
  • 2 tsp parsley, flat, finely chopped
  • Salt and pepper, from the mill

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

This easy-to-prepare salad is served on almost every Caribbean island and is very popular. It’s especially good with more spicy dishes. Gently mix all ingredients, season to taste, and chill for at least an hour before serving.
