Ingredients for 4 servings:
- 500 g lean pork
- some oil for frying
- 75 g flour
- 1 tsp salt
- 1 tsp garlic powder
- 1 cup milk
- 4 tbsp tomato paste
- 2 tsp ginger powder
- 1 can pineapple, in pieces (small can)
- ½ cup(s) water
- ½ jar of salad, Atjar Tjampoer (vegetable salad in vinegar)
- 1 tbsp soy sauce, Ketjap Manis (Indonesian sweet soy sauce)
- ½ tsp fresh ginger, grated
- 1 onion(s), small, chopped
- some starch flour, to bind
Instructions

Cut the meat into thumb-sized cubes. Mix the milk, flour, salt, and garlic powder into a batter. Toss the meat pieces in it until the batter is fully incorporated. Heat oil in a large pan and fry the meat until crispy. Drain any cooking juices and keep the meat warm. For the sauce, combine the water, the juice from the pineapple can, and the sugar in a saucepan and bring to a boil. Stir in the chopped onion, atjar tjampoer, ketjap manis, tomato paste, pineapple pieces, fresh ginger, and ginger powder and heat again. Mix the cornstarch with a little water, add to the sauce, and let it thicken. Transfer the warmed meat to a warmed bowl, pour the sauce over it, and serve. This goes well with coarse rice or mie noodles.
