Ingredients for 4 servings:
- 3 cups long grain rice
- 2 tsp, heaped vegetable stock, granulated
- 5 cups of water
- 2 tsp, heaped cracklings
- 1 piece(s) bacon, diced
- 2 medium-sized onions, diced
- 3 red bell peppers, diced
- 3 pointed peppers, finely diced
- e.g. chili pepper(s), finely diced
- 1 carrot(s), finely diced
- 1 cup peas, frozen
- 1 cup vegetable broth
- 3 tomatoes, diced
- ½ jar Ajvar, 170 g
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
It’s best to cook the rice with the granulated vegetable broth in a rice cooker. Heat the bacon fat in a large pot and fry the bacon and onions. Add the diced bell peppers, pointed peppers, carrots, peas, and chili peppers, if desired, and fry. Add the vegetable broth, tomatoes, and ajvar, and finish cooking the vegetables. Add the cooked rice and return to the heat.
