Ingredients for 1 servings:
- 1 pack of butter biscuits, approx. 150 g
- 1 tsp erythritol (sugar substitute)
- 85 g butter, melted
- 1 cup of cream cheese, approx. 300 g
- 235 ml condensed milk
- 1 cup whipped cream, approx. 200 g
- 120 ml lime juice
- 1 lime(s), zest
- 8 shots of liquid sweetener
- ½ tsp gelatin powder
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes
with erythritol (sugar substitute) and sweetener
Finely crush the biscuits with a hand blender. Then mix with erythritol and melted butter. Place in a small 18cm springform pan and press firmly into the base. Place the pan in the freezer until the cream is ready. For the cream, mix the cream cheese and condensed milk with a mixer. Add the gelatin. Then add the lime juice and zest. Whip the cream until stiff peaks form and stir into the cream along with the sweetener. Spread the cream evenly over the biscuit base and refrigerate overnight to set.
