Chicken with peanuts

Ingredients for 3 servings:

  • 500 g chicken breasts
  • 250 g peanuts
  • 2 chili peppers
  • 1 ginger
  • 2 spring onions
  • Salt
  • 2 tbsp wine, Chinese, dark soy sauce
  • 2 tsp cornstarch
  • oil
  • 1 tsp sugar
  • Chicken broth (instant)
  • 3 tbsp soy sauce, dark

Instructions

Laji Ding, spicy

Cut the chicken breast into 2-3 cm pieces. Finely chop the chili and ginger. Combine the chicken with the starch, 2 tablespoons of wine, 1 tablespoon of oil, and salt. Add the oil to a pan and fry the chicken until tender, then remove. Sauté the chili, ginger, and peanuts in the oil and return the meat to the pan. Season with 1 teaspoon of sugar, 2-3 tablespoons of soy sauce, salt, and chicken broth. Stir in the finely chopped spring onion.
