Ingredients for 4 servings:

  • 6 herring fillets
  • 1 small onion(s)
  • 4 gherkins
  • 4 cherry tomatoes
  • ½ lemon(s)
  • 1 small apple, sweet
  • 2 tbsp linseed oil
  • pepper
  • 1 small bunch of flat-leaf parsley
  • ½ tsp sugar

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

Prepare well

First, cut the herring into fairly small pieces, along with the cucumbers, tomatoes, and apple. Dice the onion even finer. Put everything together in a bowl and mix. Add the juice of half a lemon, some zest, the linseed oil, and half a teaspoon of sugar. Don’t be sparing with the pepper mill. Finally, finely chop the flat-leaf parsley and mix it in as well. There should be some liquid at the bottom of the bowl. If there isn’t enough, add some of the cucumber water. If you’re using herring from a package, use the liquid. Let everything sit in the fridge for a good 24 hours, or at least overnight, stirring occasionally if you’re already at the fridge. This goes best with pumpernickel or black bread with butter, or boiled potatoes and quark!
