Ingredients for 4 servings:
- 500 g pork (schnitzel or fillet)
- pepper
- 1 tbsp flour
- 3 stalk(s) leeks, small
- 300 g mushrooms
- 2 tbsp oil (for frying)
- 200 ml broth (meat broth)
- 2 tbsp soy sauce
- 1 clove(s) garlic
- 1 tsp cornstarch, as desired
- 1 tsp curry, mild
- Salt
- Lemon juice (or vinegar), as desired
- Peanuts, roasted and chopped, as desired
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the meat, pat dry, and cut into strips approximately 1 cm wide and 5 cm long. Season these with pepper and lightly dust with flour. Trim and wash the leeks, then cut them into thin rings and the mushrooms into thin slices. Heat the oil in a large pan. Sear the meat on all sides, then add the leeks and mushrooms and fry for 3 minutes, turning occasionally. Pour in the hot stock and soy sauce, press in the garlic clove, and simmer for 15 minutes (pork fillet only for about 5 minutes). Thicken the sauce with cornstarch if desired, and season with salt, curry powder, and lemon juice or vinegar, if desired. Sprinkle with chopped peanuts to serve. Serve best with rice, but it also tastes good with mashed potatoes or noodles.
