Ingredients for 1 servings:
- 800g bacon
- 250 g shallot(s)
- 2 large onions, red
- 3 large garlic cloves
- 60 ml balsamic vinegar
- 120 ml honey, liquid
- 100 ml liquid smoke
- 150 g brown sugar
- 1 tsp smoked paprika powder
- Pepper to taste
- some oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Bacon jam
Cut the bacon into thin strips. Finely dice the shallots and onions. Finely chop the garlic. Heat a little oil in a pan. Fry the bacon, shallots, onions, and garlic until crispy. Lightly caramelize with honey and brown sugar and deglaze with balsamic vinegar. Simmer over low heat until reduced. Add the smoke flavoring. Season generously with paprika and pepper.
