Ingredients for 1 servings:
- 2 large eggs
- 150 g sugar
- 125 g butter
- 150 g flour
- ½ pack of baking powder
- 1 bottle of lemon flavor
- some butter to grease the mold
- Candied orange and/or lemon peel, optional
- Nuts or chocolate chips, optional
- Food coloring, optional

easy and fast
Beat the eggs and sugar until fluffy. Add the melted butter, baking powder, and lemon flavoring. Once everything is combined, add the flour a spoonful at a time. Pour the batter into a greased baking pan (I usually use a loaf pan). Preheat the oven to 165°C and, once it’s warm, bake the cake on the middle rack for 45 minutes. I’ve tried various variations: friends particularly like mixing in candied lemon and/or candied orange peel. To prevent the fruit from sinking to the bottom, simply take a little of the flour and shake it with the fruit in a freezer bag. The cake is also delicious garnished with nuts or chocolate chips. For a child’s birthday party, you can also easily color the cake with food coloring.
