Ingredients for 10 servings:

  • 500 g potatoes, cooked from the previous day
  • 1 kg vegetable onion(s)
  • 250 g bacon cubes
  • 1 bunch of spring onions
  • 500 g low-fat curd cheese
  • 500 g cream
  • 4 eggs
  • salt and pepper
  • nutmeg
  • marjoram
  • Thyme

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Press the potatoes through a potato ricer and line a springform pan lined with baking paper. Peel and dice the onions. Trim the spring onions and finely slice them. Whisk together the quark, cream, and eggs. Stir in the bacon cubes, onions, and spring onions. Season the mixture generously with the spices. Pour the quark mixture onto the potato base. Bake the onion and bacon tart in a preheated oven at 160°C (320°F) for about 1 hour until golden brown.
