Ingredients for 1 servings:

  • 150 g butter, soft
  • 1 pinch of salt
  • 120 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 250 g flour
  • 2 tsp baking powder
  • 750 g apples (Boskoop, Elstar, etc.)
  • Butter flakes, cold
  • 80 g pecans, chopped
  • 30 g brown sugar
  • some pecan nuts, halves, for decoration
  • Powdered sugar for sprinkling

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Preheat the oven to 160°C fan/180°C conventional. Grease a 26cm springform pan. Beat the softened butter with salt, sugar, and vanilla sugar in a bowl until light and fluffy. Add the eggs one at a time and mix in. Mix the flour with the baking powder and stir into the butter mixture. Peel and coarsely grate an apple, and fold it into the batter. Pour the batter into the prepared springform pan. Peel, quarter, and core the remaining apples, and make several slits along the curved side. Place the apples curved side up on the batter and press in lightly. Spread the butter flakes and chopped nuts over the batter. Sprinkle with brown sugar and arrange the nut halves decoratively on the cake. Bake on the middle rack for about 50 minutes. Once cooled, sprinkle the cake with powdered sugar just before serving.
