Ingredients for 4 servings:

  • 1 kg potatoes
  • 200 g flour
  • 1 egg(s)
  • 1 tsp salt

Polish court

Peel the potatoes and boil them in salted water. Drain and immediately mash them with a ricer to obtain a perfectly smooth puree. Transfer to a bowl and let cool completely. Add the flour, egg, and a pinch of salt. Knead the dough, then divide it into about six portions. Shape each portion into a long log, about the thickness of a finger. Place the log on a floured board, flatten slightly, and cut into 1.5-2 cm wide pieces with a knife. Bring a large pot of boiling salted water to a boil and cook the kopytka for about 3 minutes, until they rise to the surface and are tender. During cooking, stir the water gently with a wooden spoon to prevent the dumplings from sticking to the bottom. Remove the logs with a slotted spoon and serve on plates.
