Mediterranean hand cheese cubes

Ingredients for 4 servings:

  • 8 cheese, Handkäs or also called Harzer and Mainzer
  • 2 onions, red, finely diced
  • 4 cloves garlic, finely chopped
  • 250 ml balsamic vinegar
  • 200 ml extra virgin olive oil
  • 50 ml water
  • 1 bunch thyme, peeled and chopped
  • 1 bunch basil, finely chopped
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

delicious variation of Handkäs with music

Cut the cheese into cubes approximately 2 x 2 cm and place in a bowl. Make a marinade from all the other ingredients and pour it over the cheese. Mix all ingredients well, cover, and refrigerate for at least 24 hours, until the cheese develops a white surface. Stir occasionally. Serve with fresh bread and butter or rosemary potatoes.
