Ingredients for 1 servings:
- 300 ml flour
- 250 ml oat flakes
- 50 ml brown sugar
- 3 tsp baking powder
- ½ tsp salt
- ¼ tsp cinnamon
- 175 ml raisins, as desired
- 1 egg(s)
- 2 tbsp molasses
- 50 ml oil, neutral
- 250 ml milk
- 1 tsp vanilla extract
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Canadian oat muffins, for 12 pieces
Mix the 7 dry ingredients together in a large bowl and make a well in the center. In a small bowl, beat the egg until frothy, then stir in the molasses, oil, milk, and vanilla. Pour the wet mixture into the well in the dry mixture and mix everything together lightly. The mixture should be lumpy! Pour the batter into a greased muffin tin. Fill muffin tins 3/4 full. I do not recommend paper baking cups. Bake the muffins for 20 to 25 minutes at 200°C (400°F). (Use a toothpick to test if the muffins are cooked through.) Then let them cool in the muffin tin for about 5 minutes and then remove them from the tin.
