Ingredients for 2 servings:
- 250 g flour
- 50 g butter, melted
- 2 eggs
- 4 tbsp water, lukewarm
- some salt
- 1 tbsp oil
- 1 kg cherries
- 60 g butter
- 100 g breadcrumbs
- 100 g sugar, mixed with
- 3 tsp cinnamon
- 60 g almond(s) (flakes)
- powdered sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Sift the flour onto a work surface and make a well. Add melted butter, eggs, lukewarm water, and salt. Knead everything with your hands until you have a smooth dough. If the dough is sticky, add a little more flour. Form the dough into a ball. Brush the dough all over with oil, wrap it in aluminum foil, and let it rest in a warm place for about 30 minutes. Meanwhile, wash and pit the cherries. Heat the butter and toast the breadcrumbs in it. Halve the strudel dough. Roll out each half, one after the other, on a floured kitchen towel to a thickness of 3 millimeters. Then carefully stretch it with your hands until the towel shows through. Fill each dough with half of the cherries, the breadcrumb mixture, cinnamon sugar, and flaked almonds. Lift the towel, roll up the dough, press the sides together, and fold in slightly. Place both strudels on a greased baking sheet and brush with melted butter. Bake in the center of a preheated oven at 200°C for about 30 minutes. Dust with powdered sugar immediately before serving.
