Beef with oyster sauce

Ingredients for 3 servings:

  • 450 g lean beef (fillet)
  • 1 tbsp soy sauce
  • 2 tsp oil (sesame oil)
  • 1 tbsp dry sherry (or Chinese rice wine)
  • 2 tsp cornstarch (cornflour)
  • 3 tbsp oil (sunflower or corn oil)
  • 2 tbsp spring onion(s), diagonally sliced
  • 5 tbsp oyster sauce

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Combine the soy sauce, sesame oil, sherry, and cornstarch. Thinly slice the beef, cut these into strips, and toss with the marinade. Let it simmer for 20 minutes. Heat a pan or wok, add the oil, and when it’s smoking, add the meat and stir-fry until browned. Remove the meat from the pan and drain (using a colander). Bring the oyster sauce to a boil in the pan (until it bubbles and appears lighter). Stir the meat back in, garnish with the spring onions, and serve with a good wild rice blend or jasmine rice. Tip: If using regular rice, you can add one or two drops of jasmine essential oil to the cooking water.
