Ingredients for 4 servings:
- 2 eggs
- 200 g cheese, grated
- 1 tsp mustard, medium hot
- 2 dashes Worcestershire sauce, to taste
- Pepper, freshly ground
- 8 slices of toast
- 100 g butter or cream cheese, approx. and to taste
- 4 slice(s) ham, cooked
- Peach(s), in wedges
- tomato(s)
- spring onion(s)
Instructions

Toast dish from France that is easy to prepare
Beat the eggs with a hand mixer until frothy. Reserve about 4 tablespoons of the cheese for the garnish and mix the remaining cheese with the mustard, Worcestershire sauce, pepper and the eggs. Spread one side of the toast generously with butter or cream cheese and spread the cheese mixture on four slices of toast, then place the ham on top. Cover with the remaining slices of toast and press down well. Spread the remaining butter or cream cheese on top and garnish with the reserved cheese and, if desired, finely chopped tomatoes or peaches. Baking time: approx. 10 minutes at 200 degrees C top and bottom heat in a preheated oven. Side dish or additional garnish as desired: sliced tomatoes or peach slices, perhaps parsley or, or… Note: If you want to fry fried eggs separately from these croques and place them on top of the toast after baking. If the peaches or tomatoes are then served separately, it almost automatically becomes a very tasty so-called Croque Madame.
