Ingredients for 1 servings:

  • 40 g ground almonds
  • 40 g almonds, chopped
  • 1 tbsp butter, softened
  • 1 egg(s)
  • ½ bottle of vanilla flavor
  • ½ tsp baking soda
  • 2 tbsp whipped cream
  • sweetener
  • 1 pinch of salt
  • 50 g sugar-free chocolate, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 day 6 hours; Cooking/baking time approx. 12 minutes; Total time approx. 1 day 6 hours 27 minutes

Melt the butter and add it to a mixing bowl along with the almonds, egg, flavoring, baking soda, heavy cream, sweetener, and salt. Stir until smooth. Add the chopped chocolate and fold in. Refrigerate the dough for about 30 minutes. Preheat the oven to 180°C. Using 2 teaspoons, drop small portions onto a baking sheet lined with parchment paper. Bake the cookies in the oven for about 12 minutes.
