super chocolatey
For the batter, first melt the chocolate and butter in a double boiler and mix well, then remove from the boiler and set aside. Beat the eggs with the sugar and brown sugar until creamy. Mix the flour, cocoa, salt, and baking powder and stir into the egg mixture alternately with the chocolate-butter mixture. Finally, add the chopped chocolate and chopped nuts. Chill the batter for about 1 hour, then place about a heaped teaspoon of the mixture in heaps, leaving some space between them, on greased baking sheets. Place the cookies in the oven preheated to 180°C (top/bottom heat) one baking sheet at a time and bake for about 10-12 minutes. The surface of the cookies should be firm, but the inside should still be soft. Let the cookies cool on the baking sheet for about 2-3 minutes, then transfer to a wire rack and let them cool completely. The cookies are super chocolatey and not too sweet. If you use chopped dark chocolate, they’ll have a particularly intense chocolate flavor. If you prefer something sweeter, you should use milk or white chocolate and perhaps replace the cocoa powder in the dough with more flour. This yields approximately 40 cookies (depending on size). The whole batch has 5218 kcal.
