Mandarin cake

Ingredients for 1 servings:

  • 6 eggs, separated
  • 275 g sugar
  • 375 g flour
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 300 g margarine
  • 4 small cans of tangerine(s)
  • powdered sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dessert recipe from South Africa

Whisk the egg yolks with the sugar and vanilla sugar until frothy, then add the flour and baking powder and mix. Heat the margarine and mix it into the batter. Whisk the egg whites until stiff and fold in. Spread the batter on a baking tray and distribute the drained mandarins (reserving the juice) evenly over the batter. Bake for 25 minutes at 220°C (200°C fan oven) on the middle rack, then remove the tray. Immediately pour the mandarin juice evenly over the hot cake. Dust with powdered sugar just before serving. TIP: A version using pineapple (very finely chopped) instead of the mandarins also tastes good.
