Ingredients for 4 servings:

  • 2 packs of cheese (Farmers Cheese), salted (213 g per pack)
  • 1 cup sour cream (thick) total 213 g
  • 1 bunch chives, fresh
  • 1 bunch of spring onions
  • lots of chives, dried
  • some milk
  • some salt, according to taste

Farmers Cheese as a quark substitute

Beat the two packages of Farmers Cheese with an electric mixer until slightly smooth, as this cheese is very dry and crumbly. Now add the thick sour cream and mix as smoothly as possible. Add a little milk. How much or how little depends on the consistency of the cheese. Finely chop the chives and fold them into the cheese mixture with a large spoon, along with the sliced ​​spring onions. Now add the dried chives (this also thickens the cheese mixture). It tastes almost like quark at home. With boiled potatoes, fried potatoes, and salad. Or simply on a good slice of bread. By the way, this Farmers Cheese is also gluten-free. Note: This recipe is for those “poor expats” who can’t buy quark (like me), or who don’t want to or can’t make their own.
