Beer Cheese Dip

Ingredients for 1 servings:

  • 1 kg cheese, grated (preferably Cheddar or Gouda)
  • 1 onion(s), diced
  • 2 garlic cloves
  • ½ tsp hot sauce, e.g. salsa
  • ¼ tsp pepper
  • 350 ml beer
  • Salt and pepper to taste
  • thyme sprig(s) for garnishing
  • possibly white bread
  • possibly butter

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

or Grilled Beer Cheese Sandwich, a small variation of the American classic Grilled Cheese Sandwich

Mix the first 5 ingredients. Slowly add the beer, stirring constantly. Stir until nice and creamy. Season with salt and pepper. Cover and let stand for 2 hours. Garnish with thyme to serve. It’s a great dip for crackers, vegetables, etc. If you want to make this as a pimped-up grilled cheese sandwich, please follow these steps: Take 2 slices of white bread and butter one side of each slice. Spread some of the cheese mixture on the unbuttered side and cover it with the other slice (butter side up). Heat a pan and melt some butter in it. Place the sandwiches in the pan and cook for about 3-5 minutes on each side, until the bread is browned and the cheese is melted. Caution! The pan must not be too hot, otherwise the bread will turn black and the cheese will not be melted yet!
