Mr. Tom's Peanut Cookies

Ingredients for 1 servings:

  • 75 g margarine or butter, soft
  • 100 g brown sugar
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 5 drops butter-vanilla flavoring
  • 1 egg(s)
  • 125 g flour
  • 1 tsp, leveled baking powder
  • 200 g peanuts, chopped, salted

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Beat the margarine or butter with a hand mixer until smooth. Gradually add the sugar, vanilla sugar, and flavoring while stirring until the mixture forms a thick batter. Beat in the egg on high for about 1/2 minute. Mix the flour and baking powder and stir in, then briefly stir in the nuts. Using 2 teaspoons, place small portions well apart (careful, the batter will spread a lot) onto a baking sheet lined with baking paper and flatten slightly. Bake for about 10 minutes using top/bottom heat at 180°C (preheated) or fan-assisted oven at 160°C. Makes about 50 cookies. Tip: If you prefer the cookies a little crumbly, simply store them in a tightly sealed container for a few days.
