Manhattan Blueberry Muffins

Ingredients for 1 servings:

  • 280 g blueberries
  • 300 g flour
  • 110 g sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 350 ml buttermilk
  • 60 ml olive oil
  • 2 eggs
  • 1 packet of vanilla sugar (bourbon vanilla sugar)
  • 70 g flour
  • 50 g oat flakes
  • 70 g sugar
  • ½ tsp cinnamon
  • 6 tbsp butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Delicious blueberry muffins with a crumb crust. Makes 12.

Combine flour, oats, sugar, cinnamon, and butter in a bowl to form a crumble. Wash and drain the blueberries, then cover with 1 1/2 tablespoons of flour. Mix flour, sugar, baking powder, baking soda, and salt in a bowl. In another bowl, combine buttermilk, olive oil, eggs, and vanilla sugar. Slowly stir in the flour mixture. Finally, fold in the blueberries. Spoon the batter into muffin cups and spread the crumb topping on top. Bake at 200°C for about 25 minutes.
