Ingredients for 4 servings:

  • 450 g beans, green, cleaned
  • Salt and sugar for the cooking water
  • 2 tsp olive oil, extra-virgin (or hazelnut oil)
  • 2 tbsp hazelnuts, chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

(suitable for diabetics)

Cook the beans in boiling salted water (with a pinch of sugar) until tender and crisp, about 7 minutes. They should retain their color. Drain. Heat the oil in a large, nonstick pan over low heat. Add the nuts and stir for 1 minute until golden brown. Add the beans and toss in the nut oil. Season with salt and pepper. Per serving: 104 kcal, 6 g fat, 11 g carbohydrates, 3 g protein, 7 g fiber.
