Herring salad with boiled potatoes

Ingredients for 4 servings:

  • 6 fish fillets (matjes fillets)
  • 2 apples, green
  • 4 cucumber(s), sour
  • 3 onions
  • 500 ml cream
  • oil
  • Vinegar
  • Sugar
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cut the matjes into bite-sized pieces. Dice the apples and cucumbers, and slice the onions into rings. Pour the cream into a large bowl and season with vinegar and sugar to a light sweet and sour taste. Then stir in the oil vigorously. Season with salt and pepper. Be careful with the salt, as the matjes is also somewhat salty. Add all the remaining ingredients to the cream, stir well, and let it simmer for about 2 hours. Serve with boiled potatoes.
