Ingredients for 8 servings:

  • 700 g pumpkin(s)
  • 1 apple
  • 50 g sunflower seeds or nuts, chopped
  • ½ lemon(s), the juice
  • 3 tbsp walnut oil
  • 4 tbsp apple juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the sauce, combine the lemon juice with the oil and apple juice. Peel the pumpkin. Remove the stringy parts and seeds with a spoon. Coarsely grate the flesh into the sauce. Wash the apple, dry it, quarter it, core it, and cut it into sticks. Mix the sticks into the salad. Sprinkle the sunflower seeds or nuts over the salad.
