Ingredients for 4 servings:
- 4 white sausages
- 1 handful of parsley
- 5 tbsp breadcrumbs
- 2 eggs
- 3 tbsp flour
- 2 tbsp clarified butter
- 1 onion(s)
- ½ chili pepper(s)
- 1 tbsp butter
- 2 tbsp mustard, sweet
- 2 tbsp mustard, hot
- 200 ml cream
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
The quantity is enough as a starter for 4 or as a main course for 2
Peel the white sausages and halve them lengthwise. Pluck the parsley leaves from the stalks, wash them, finely chop them, and mix them with the breadcrumbs. Roll the white sausage halves one after the other in flour, beaten egg, and herbed breadcrumbs and fry in clarified butter until golden brown on both sides. Peel the onion, deseed the chili, and finely dice both. Sauté in the butter until translucent, add the mustard and cream, bring to a boil briefly, and season with salt and pepper. Finally, purée the sauce with a hand blender and serve with the breaded white sausages. Serve with boiled potatoes and salad or—for a truly Bavarian touch—homemade pretzel dumplings.
